This is one of my closest friends' yummy sausage spinach soup that is quick, easy and hearty!!

Sausage Spinach Soup

Ingredients

  • 1 pound ground sausage, mild

  • 12 ounce bag frozen Chopped Spinach

  • 1 small Onion, diced

  • 2 medium Carrots, diced

  • 2 Celery Stalks, diced

  • 1 Garlic Clove, minced

  • 1 Tsp Coarse Kosher Salt

  • ½ Tsp Black Pepper

  • 2 Tbsp Extra Virgin Olive Oil

  • 8 c Chicken Broth

  • 2 - 12 ounce cans Evaporated Milk

  • 1 Tsp Italian Seasoning

  • 2 Medium Sized Red Potatoes, diced

  • Pinch of Red Pepper Flakes

Directions 

  1. Add olive oil to a stock pot over medium low.

  2. Add the onion, carrots, celery, salt and pepper and sweat the vegetables for about 10-12 minutes.

  3. Add the garlic for 30 seconds

  4. Add the ground sausage, breaking it up into smaller pieces cooking until browned.

  5. Add chicken broth, evaporated milk, potatoes, italian seasoning, red pepper flakes

  6. Bring to a boil, then simmer for 20 minutes.

  7. Serve with crusty bread
