STRAWBERRY SHOOTERS
A decadent yummy dessert/after dinner cocktail all in one!
Strawberry Shooters
Ingredients
1 lb Strawberries (about 15), look for the biggest strawberries you can find
7 oz Ghirardelli Dark Chocolate, 70% cacao
1 Tbsp Vegetable Shortening
Chocolate Liqueur or Baileys
Can of Whipped Cream
Directions
Wash and dry the strawberries gently. Pinch off the leaves and stem. Set aside to dry completely for about 15 minutes.
In a medium sized microwavable bowl break up the chocolate and add the bowl along with the shortening to a microwavable bowl. Microwave in 30 second intervals, stirring in between, until fully melted.
Line a sheet pan with wax paper. I like to use a candy apple stick when dipping. Gently insert the stick into the stem of the strawberry but not too far in, you want to be able to remove the stick easily after dipping. Dip the strawberry into the melted chocolate and allow the excess to drip back into the bowl. Place the strawberry on the sheet pan and remove the stick gently. Repeat with the rest of the strawberries.
Chill the strawberries in the refrigerator for 15 minutes to set.
An hour before your guests arrive, core out the middle of the strawberry. Leave in a container in the refrigerator (see below for do ahead tip).
When ready to serve, grab some shot glasses that are round and wide (skinny long shot glasses won’t work). Add the hollowed out strawberry to the shot glass.
Pour in the chocolate liqueur almost to the top.
Top with the whipped cream.
The strawberries can be dipped 24 hours in advance. Another tip is to add the strawberries to the shot glasses and leave on a tray in the refrigerator.
