Baked Brie with Strawberries

Ingredients

  • 8 ounce Wheel of Brie Cheese

  • 1 ½ c Strawberries, quartered

  • 2 Tbsp Balsamic Vinegar

  • 2 Tbsp Honey

  • 1 Tbsp Fresh Basil, chiffonade (cut in ribbons, plus some extra for garnish)

  • Pinch of Salt

Directions

Preheat the Oven to 350F

  1. In a 2 cup bowl add the balsamic vinegar, honey, 1 tbsp basil and salt and mix until combined well. Then add the strawberries and mix until they are all coated and set aside.

  2. Place the brie on a rimmed baking sheet lined with parchment paper, score the top and bake until the top is softened, about 15 minutes  (feels very soft when pressed like it's about to collapse).  Let it sit for 1-2 minutes.

  3. Add the brie to a small platter and pour the strawberries over the top adding some of the juices but not too much.  

  4. Garnish with fresh basil and serve with crackers or crostini.
