This recipe pairs well with the Teriyaki Salmon already posted on the GGG site.

Cauliflower Fried Rice

Serves 4-5

Ingredients

  • 2 - 10 ounce bag of frozen Cauliflower Rice Medley, defrosted

  • 2 ½ Tsp Sesame Oil

  • 1 Egg, beaten

  • 1 c Snow Peas (ends trimmed)

  • ⅓ c Red Pepper, diced

  • 2 c Broccoli Florets in bite size pieces

  • 1 Tbsp Water

  • 1 Shallot, diced

  • ¼ Tsp Fresh Ginger, minced

  • 1 Garlic Cloved, minced

  • 1 Tsp Fresh Ginger, chopped finely

  • ¼ c Soy Sauce (low sodium)  

  • 2 Tbsp Scallions, chopped

Directions

  1. Over medium heat in a nonstick skillet or wok add ½ teaspoon sesame oil.  Add one beaten egg stirring constantly, remove once firm and put in a small bowl and set aside.

  2. In the empty skillet add ½ tsp sesame oil and saute the snow peas and red pepper for about 1-2 minutes or until they start to have brown spots, set aside along with the egg.

  3. In the empty skillet add ½ tsp sesame oil and saute the broccoli florets for a minute then add 1 Tbsp water and cover and cook for 2 more minutes. Set aside with egg/snow pea mixture.

  4. To the empty skillet add 1 tsp sesame oil and add the shallot, ginger & garlic and cook for about 30 seconds to a minute then add the cauliflower rice and saute for about 6-7 minutes. 

  5. Add the soy sauce and mix until incorporated.  Turn off heat and add eggs/snow peas/broccoli and it's ready to serve. 

  6. Garnish with chopped scallions.
