SHRIMP COCKTAIL

Shrimp Cocktail

Serves 4

Ingredients

  • 1 pound Collossal Shrimp

  • 1 ½ Tsp Coarse Kosher Salt

  • Lemon Wedges for garnish

  • Cocktail Sauce (recipe below)

Directions

  1. Fill a pot halfway with water and salt. 

  2. Add the shrimp and cook over medium high heat until the shrimp turns pink.

  3. The shrimp will be cooked before the water starts to even boil.

  4. Scoop the shrimp out of the pot and put into a cool water bath to stop the cooking.

  5. Remove the shells off leaving the tail intact for presentation and pat dry with a paper towel.

  6. Put into an airtight container in the refrigerator to chill for at least a few hours.

  7. Serve with cocktail sauce and lemon wedges

I like to fancy up this appetizer and add cocktail sauce to a martini glass, add the shrimp around the edge of the glass and garnish with a lemon wedge.

Cocktail Sauce

Ingredients

  • 1 c Ketchup

  • ½ c Prepared Horseradish

  • 2 ½ Tsp Fresh Lemon Juice  

  • 1 Tsp Hot Sauce, preferred brand Franks

  • ¼ Tsp Black Pepper

  • ¼ tsp Worcestershire Sauce

  • ¼  Tsp Garlic Powder

  • ¼ Tsp Onion Powder

Directions

  1. Add all the ingredients to a bowl and mix.

Will stay fresh in an airtight container for about 1-2 weeks in the refrigerator.
