GARLIC MASHED CAULIFLOWER
Garlic Mashed Cauliflower
Serves 4
Ingredients
1 Large Head of Cauliflower or 2 Small, cut into florets
3 smashed Garlic Cloves
1 Tsp Coarse Kosher Salt
4 Tbsp Salted Butter, softened to room temperature
5 ounce package garlic cheese spread like Boursin (use half)
2 ounces Cream Cheese, softened to room temperature
¼ cup Sour Cream
2 Tbsp Heavy Cream
¾ Tsp Salt
¼ Tsp Black Pepper
Chopped Chives and/or Fresh Parlsey, chopped for garnish
Directions
Fill the pot with water, cauliflower florets, garlic cloves and 1 Tsp kosher salt.
Bring to a boil and cook until the florets are soft, about 15 minutes.
Drain the florets and garlic in a strainer.
Add the florets and garlic into a food processor with 2 tbsp butter, ½ garlic cheese spread, sour cream, heavy cream, cream cheese, ¾ Tsp salt and ¼ Tsp black pepper and mix until blended like mashed potatoes. If you do not have a large food processor you could use an immersion blender or a potato masher.
Add to a serving bowl add the remaining 2 tbsp butter and mix until melted, then garnish with chives and/or parsley.
