Garlic Mashed Cauliflower

Serves 4

Ingredients

  • 1 Large Head of Cauliflower or 2 Small, cut into florets

  • 3 smashed Garlic Cloves

  • 1 Tsp Coarse Kosher Salt

  • 4 Tbsp Salted Butter, softened to room temperature  

  • 5 ounce package garlic cheese spread like Boursin (use half)

  • 2 ounces Cream Cheese, softened to room temperature

  • ¼ cup Sour Cream

  • 2 Tbsp Heavy Cream 

  • ¾ Tsp Salt

  • ¼ Tsp Black Pepper

  • Chopped Chives and/or Fresh Parlsey, chopped for garnish

Directions

  1. Fill the pot with water, cauliflower florets, garlic cloves and 1 Tsp kosher salt.  

  2. Bring to a boil and cook until the florets are soft, about 15 minutes.  

  3. Drain the florets and garlic in a strainer.

  4. Add the florets and garlic into a food processor with 2 tbsp butter, ½ garlic cheese spread, sour cream, heavy cream, cream cheese, ¾ Tsp salt and ¼ Tsp black pepper and mix until blended like mashed potatoes.  If you do not have a large food processor you could use an immersion blender or a potato masher.

  5. Add to a serving bowl add the remaining 2 tbsp butter and mix until melted, then garnish with chives and/or parsley.
