Dark Chocolate Hot Fudge Sauce
Ingredients
2 c sugar
1 ½ c heavy cream
1 ½ c cocoa powder
1 stick unsalted butter (½ c)
1 ½ tsp vanilla extract
¼ tsp salt
3.5 ounces 70% chocolate bar chopped
Directions
In a 2 quart saucepan combine sugar, cocoa, heavy cream and stir with a whisk until combined.
Turn heat up to medium high and bring to a slight boil.
Add the butter and bring to a boil until the sauce starts to thicken, about 2 minutes. Stirring constantly.
Remove from heat, stir in vanilla, salt and chopped chocolate and mix until the chocolate is completely melted.
Let cool for about 5 minutes before serving over ice cream.
Store in a mason jar in the refrigerator. To reheat, microwave for 15 seconds at a time until warm and I would suggest only microwaving what you are going to use rather than the whole jar.
Pineapple Sauce
Ingredients
2 cups fresh pineapple cut into chunks
¼ cup fresh lemon juice
2 heaping tablespoons brown sugar
⅛ tsp ground cinnamon
Pinch of salt
Directions
Add the pineapple, lemon juice, brown sugar and cinnamon to a saucepan.
Over medium heat cook for 10 minutes until the sauce has started to thicken, stirring occasionally.
Set aside to cool slightly.
Add to a blender or food processor and pulse just a couple times.
You can make this ahead of time and leave in the refrigerator for up to 5 days.
Makes about 1 cup.
