BLACK BEAN TOMATILLO SALSA

Black Bean Tomatillo Salsa

Ingredients

  • 26 oz Canned Tomatillos, drained 

  • 6 Scallions, chopped 

  • 6 Garlic Cloves, minced

  • 1 - 4 oz can Diced Green Chiles 

  • 1 lg Jalapeño, seeded and diced

  • 1 c Fresh Cilantro, chopped

  • 1 - 15 oz Can of  Black Beans, rinsed and drained 

  • ½ c Frozen Corn Kernels, thawed

  • ½ tsp Coarse Sea Salt

  • ¼ tsp Black Pepper

Directions

  1. Blend the tomatillos in the food processor for a minute. 

  2. Add the scallions, garlic, jalapeno, green chiles and cilantro.

  3. Remove tomatillo mixture from the food processor and place in a bowl, stir in the beans and corn.  

You can make this 2 days ahead of time and keep in the refrigerator.
