BLACK BEAN TOMATILLO SALSA
Black Bean Tomatillo Salsa
Ingredients
26 oz Canned Tomatillos, drained
6 Scallions, chopped
6 Garlic Cloves, minced
1 - 4 oz can Diced Green Chiles
1 lg Jalapeño, seeded and diced
1 c Fresh Cilantro, chopped
1 - 15 oz Can of Black Beans, rinsed and drained
½ c Frozen Corn Kernels, thawed
½ tsp Coarse Sea Salt
¼ tsp Black Pepper
Directions
Blend the tomatillos in the food processor for a minute.
Add the scallions, garlic, jalapeno, green chiles and cilantro.
Remove tomatillo mixture from the food processor and place in a bowl, stir in the beans and corn.
You can make this 2 days ahead of time and keep in the refrigerator.
