This is best if you start this pasta dish early in the day so the salad will chill in the refrigerator. 


BLT Pasta Salad

Ingredients

  • 16 ounce package of Bacon, cooked and crumbled into bite size pieces

  • 1 lb box of Rotini Pasta

  • ¾ c Mayonnaise

  • ½ c Sour Cream

  • ¾ c Ranch Dressing, preferred Hidden Valley Ranch

  • ½ c Buttermilk 

  • 1 ½ Tbsp Fresh Lemon Juice

  • 2 Garlic Cloves, minced

  • 1 Tsp Sea Salt, divided

  • ¾ Tsp Black Pepper, divided

  • ½ Tsp Onion Powder

  • 1 pint Grape Tomatoes, cut in halves

  • 2 c Romaine Lettuce, bite size pieces

  • ½ c Red Onion, diced or sliced thinly

  • 1-2 Tbsp Fresh Parsley, chopped

Directions

  1. Cook the pasta according to the directions on the box.  

  2. While the pasta is cooking, whisk together the mayonnaise, sour cream, ranch dressing, buttermilk, lemon juice, garlic, onion powder, ½ tsp salt and ¼ tsp black pepper then set aside.

  3. Once the pasta is cooked, drain well.  

  4. In a large mixing bowl add the pasta, half the dressing, tomatoes, onions, ½ tsp salt and ¼ tsp black pepper - mix, cover with plastic wrap and put in the refrigerator until ready to serve and add the rest of the ingredients. The leftover dressing should also be refrigerated.

  5. Once ready to serve, microwave the cooked bacon for about 40 seconds, fold in the rest of the dressing, half of the bacon and lettuce.

  6. Garnish with the fresh parsley and rest of the bacon.
