This recipe is a great way to use any leftover Smashed Potatoes from the evening prior or if you know you will be having overnight guests definitely make a few extra!  If you do not have leftovers, you can use English Muffins, Toast or Bagels.

Eggs Benedict with Smashed Potatoes

Serves 2

Ingredients for Hollandaise Sauce

  • 2 Egg Yolks

  • 3 Tbsp Fresh Lemon Juice

  • 1 Stick of Salted Butter (8 Tbsp), cut into 8 slices

Directions

  1. Add the egg yolks and lemon juice to a pan and whisk together well.

  2. Over a very very low simmer add one piece of butter at a time until each piece is melted then add the next piece.  Continue to whisk constantly as you add the butter pieces and sauce will thicken.

  3. Once thickened, remove from heat immediately. Sauce will serve 3-4.

Ingredients for Poached Eggs

  • 4 eggs room temperature 

  • 1 tablespoon white wine distilled vinegar

Directions

  1. Crack each egg into its own ramekin.  

  2. Bring a large saucepan filled with 3-4 inches of water to a rolling boil.  

  3. Add the vinegar to the pan.  

  4. Using a spoon, swirl the water in a circle and pour each egg into the boiling water and reduce the heat to medium and set the timer for 3 minutes.  

  5. At about 2 and ½ minutes you’ll want to start removing the poached eggs with a slotted spoon and rest them on a paper towel for a minute to absorb excess water.  

  6. This will help you avoid soggy toast and a watery plate!

Tip: Always make sure to crack your eggs into a ramekin not directly into the pan so you are not cracking an egg yolk that might be broken.  Take it from me, it makes a mess of your pan!!!   Make sure you use fresh eggs, you want the white liquid part to be firm and not runny.


If you are using Smashed Potatoes, reheat them in the oven at 400 for about 15 minutes or start making the toast!


Assemble Eggs Benedict

  • 4 Poached Eggs

  • 6 Tbsp Hollandaise Sauce

  • 4 Smashed Potatoes

  • 1 Tbsp fresh chives, chopped

Directions

  1. Top each smashed potato with a poached egg.

  2. Drizzle with hollandaise sauce and garnish with fresh chopped chives.

Adding a slice of Canadian Bacon is also a yummy addition.
