DELICATA SQUASH ROASTED

This is a very simple, easy and delicious side dish.

Delicata Squash Roasted

Ingredients

  • 1 Delicata Squash

  • 1-2 Tbsp Olive Oil

  • ½ - 1 Tsp Salt

  • ¼ - ½ Tsp Black Pepper

Depending on the size of the squash you may need alittle more or less olive oil/salt/pepper

Directions

Preheat the oven to 425°F. 

  1. Scrub the outside of the squash with a brush until very clean. Cut ends off to create two flat edges. Cut in half lengthwise and scoop out seeds.

  2. Cut into ¼ to ½ inch slices, keeping the size of the slices consistent. Add the squash to a bowl and toss with the olive oil so all sides of each slice are coated in the oil. Sprinkle with the salt and pepper and mix until all sides are seasoned.

  3. Add the squash in a single layer to a rimmed sheet pan lined with aluminum foil and sprayed with cooking spray.   

  4. Place in the oven and roast for 10-15 minutes or until golden. Flip each slice over and roast for another 10-15 minutes or until golden brown and crispy on the outside and tender on the inside. Enjoy immediately.
