Greek Layer Dip

Ingredients

  • 3 c hummus

  • 1 ½ c plain greek yogurt (I prefer Fage 5%)

  • 1 c English cucumber diced in ¼ inch pieces

  • ½  c jarred roasted red peppers –(pat dry) and chopped

  • 1/3 c pitted Kalamata olives – chopped

  • 3-4 Scallions diced

  • 3 tbsp extra virgin olive oil, plus extra for drizzling

  • 1 tbsp oregano + ¼ tsp

  • ¼ tsp kosher salt 

  • ¼ tsp pepper

  • ½ c feta cheese, crumbled

Directions

  1. On a 10-13 inch shallow rimmed platter, spread hummus in a single layer.  

  2. Spread yogurt in an even layer over hummus.

  3. Mix cuke, red peppers, olives, scallions, oregano, salt and pepper and olive oil in a bowl (can be made ahead of time).  Spoon an even layer over yogurt, sprinkle with feta – drizzle olive oil over the top and garnish with ¼ tsp oregano.

  4. Serve with Pita chips or Syrian bread.
