Greek Layer Dip
Ingredients
3 c hummus
1 ½ c plain greek yogurt (I prefer Fage 5%)
1 c English cucumber diced in ¼ inch pieces
½ c jarred roasted red peppers –(pat dry) and chopped
1/3 c pitted Kalamata olives – chopped
3-4 Scallions diced
3 tbsp extra virgin olive oil, plus extra for drizzling
1 tbsp oregano + ¼ tsp
¼ tsp kosher salt
¼ tsp pepper
½ c feta cheese, crumbled
Directions
On a 10-13 inch shallow rimmed platter, spread hummus in a single layer.
Spread yogurt in an even layer over hummus.
Mix cuke, red peppers, olives, scallions, oregano, salt and pepper and olive oil in a bowl (can be made ahead of time). Spoon an even layer over yogurt, sprinkle with feta – drizzle olive oil over the top and garnish with ¼ tsp oregano.
Serve with Pita chips or Syrian bread.
