TURKEY DINNER MINI MEATLOAF’S
Thanksgiving dinner is one of my favorite meals. This meatloaf combines the flavoring of turkey and stuffing in one yummy mini individual loaf.
Turkey Dinner Mini Meatloaf’s
Serves 8
Ingredients
2 Pounds Ground Turkey
6 Tbsp Butter, divided
2 Apples of your choice, peeled, cored and diced
3-4 Small Celery Ribs, diced fine
1 Onion, diced fine
1 Bay Leaf
4 Garlic Cloves minced, divided
½ Tsp Salt
¼ Tsp Black Pepper
2 ½ c Dry Stuffing (Prefered brand Pepperidge Farm)
1 ¾ c Chicken Broth
1 Tbsp Poultry Seasoning
¼ c Fresh Parsley chopped plus some for garnish
1 egg
Directions
Preheat the oven to 350°F.
Line a rimmed baking sheet with aluminum foil and spray with nonstick cooking spray.
In a skillet, melt 4 tbsp butter and sauté the apples, celery, onion, bay leaf, 2 minced garlic cloves, salt and pepper for 15 minutes over low heat.
Place the onion/apple mixture in a large bowl, set aside to cool.
In the same skillet, add the stuffing mixture, chicken broth and poultry seasoning and cook for about 5 minutes.
Add to the onion/apple mixture and set aside to cool.
Add the ground turkey, parsley and egg to the large bowl and mix all ingredients together.
Form into 8 individual meatloafs and place them onto the rimmed sheet pan.
Melt 2 tbsp butter in a small saucepan, add two cloves of minced garlic.
Brush the garlic butter over the tops of the meatloaf.
Bake for 45 minutes or until the internal temp reaches 165.
Garnish with Fresh Parsley.
Serve with gravy, mashed potatoes and cranberry sauce and your favorite veggie!
This recipe can be made ahead of time and just cover the sheet pan with plastic wrap and leave in the refrigerator until you are ready to cook (up to step 7). Before you place them in the oven, brush the tops wth the garlic butter..
