Guacamole
Ingredients
5 ripe Haas avocados
1 medium tomato, seeded, and diced small
¼ cup red onion diced finely
2 jalapeno peppers, seeded and diced finely
2 tablespoons fresh lime juice
1 garlic clove, smashed/minced
1/2 teaspoon coarse kosher salt
¼ teaspoon fresh ground black pepper
½ cup chopped cilantro
Guacamole Prep
Mash and mix avocado, add remaining ingredients except tomato and mix. Fold in tomato.
Serve with tortilla chips.
Low Carb options: Tostitos multigrain scoops, carrots, celery sticks, red pepper
Storage
Lay plastic wrap directly on top of the guacamole to keep it from getting brown and put in the refrigerator for at least 1 hour.
