Guacamole

Ingredients

  • 5 ripe Haas avocados

  • 1 medium tomato, seeded, and diced small

  • ¼ cup red onion diced finely

  • 2 jalapeno peppers, seeded and diced finely 

  • 2  tablespoons fresh lime juice

  • 1 garlic clove, smashed/minced

  • 1/2 teaspoon coarse kosher salt

  • ¼ teaspoon fresh ground black pepper

  • ½ cup chopped cilantro 

Guacamole Prep

  1. Mash and mix avocado, add remaining  ingredients except tomato and mix. Fold in tomato.

  2. Serve with tortilla chips.

  3. Low Carb options: Tostitos multigrain scoops, carrots, celery sticks, red pepper

Storage

  • Lay plastic wrap directly on top of the guacamole to keep it from getting brown and put in the refrigerator for at least 1 hour.
