For a vegetarian option, substitute the chicken broth for vegetable broth.

Hot & Sour Soup

Serves 6

Ingredients

  • 2 ½ cups chicken broth

  • 5 cups water

  • 8 mushrooms sliced thinly

  • 6 scallions diced

  • 2 eggs

  • ¼ c cornstarch

  • ¼ c low sodium soy sauce

  • ¼ c distilled white vinegar

  • 1 teaspoon hot sauce

Directions

  1. Mix one cup of water with the cornstarch until it is all incorporated.

  2. Add to a large saucepan the cornstarch slurry, chicken broth, 4 cups water, mushrooms, soy sauce, hot sauce, vinegar and bring to a boil, then simmer for 10-15 minutes until it starts to thicken.  

  3. Beat the eggs 

  4. Shut off the heat and mix in the egg constantly stirring.  

  5. Add  scallions

Prep Ahead Tip:

You can prep the soup ahead of time.  After the soup starts to thicken, turn it off.  When you are ready to serve, bring the soup to a low boil then turn off the heat and add egg.  Add scallions and serve.
