HOT & SOUR SOUP
For a vegetarian option, substitute the chicken broth for vegetable broth.
Hot & Sour Soup
Serves 6
Ingredients
2 ½ cups chicken broth
5 cups water
8 mushrooms sliced thinly
6 scallions diced
2 eggs
¼ c cornstarch
¼ c low sodium soy sauce
¼ c distilled white vinegar
1 teaspoon hot sauce
Directions
Mix one cup of water with the cornstarch until it is all incorporated.
Add to a large saucepan the cornstarch slurry, chicken broth, 4 cups water, mushrooms, soy sauce, hot sauce, vinegar and bring to a boil, then simmer for 10-15 minutes until it starts to thicken.
Beat the eggs
Shut off the heat and mix in the egg constantly stirring.
Add scallions
Prep Ahead Tip:
You can prep the soup ahead of time. After the soup starts to thicken, turn it off. When you are ready to serve, bring the soup to a low boil then turn off the heat and add egg. Add scallions and serve.
