LOW CARB AMERICAN CHOP SUEY
This is my Mom’s recipe and we grew up on this as a meal that we had just about weekly. It's inexpensive, easy and quick. Its my husband's favorite and he nicknamed it goup! However, I have created a variation and used cauliflower florets in place of the pasta for a low carb option.
Low Carb American Chop Suey
Serves 4
Ingredients
1 lb Ground Hamburger, 93% lean
1 Onion, chopped
1 red pepper chopped
2 Garlic Cloves, minced
8 oz Tomato Sauce
3 oz Tomato Paste
1 ½ c Water
16 oz frozen bag of Cauliflower Florets, defrosted
1 tsp Sugar
1 tsp Coarse Kosher Salt
½ tsp Black Pepper
Directions
Add the hamburger, onion and pepper to a cast iron pan or skillet over medium heat. Cook for 10-12 minutes.
Add garlic, salt and pepper for 30 seconds.
Add the tomato sauce, paste, sugar and water. Mix until combined.
Add the cauliflower florets and bring to a boil.
Turn heat down to a simmer, cover the pan and cook for 20 minutes.
Serve with feta cheese or parmesan cheese.
