This is my Mom’s recipe and we grew up on this as a meal that we had just about weekly.  It's inexpensive, easy and quick. Its my husband's favorite and he nicknamed it goup! However, I have created a variation and used cauliflower florets in place of the pasta for a low carb option.

Low Carb American Chop Suey

Serves 4

Ingredients

  • 1 lb Ground Hamburger, 93% lean

  • 1 Onion, chopped

  • 1 red pepper chopped

  • 2 Garlic Cloves, minced

  • 8 oz Tomato Sauce

  • 3 oz Tomato Paste

  • 1 ½  c Water  

  •  16 oz frozen bag of Cauliflower Florets, defrosted  

  • 1 tsp Sugar

  • 1 tsp Coarse Kosher Salt

  • ½ tsp Black Pepper

Directions

  1. Add the hamburger, onion and pepper to a cast iron pan or skillet over medium heat.  Cook for 10-12 minutes.

  2. Add garlic, salt and pepper for 30 seconds.

  3. Add the tomato sauce, paste, sugar and water.  Mix until combined.

  4. Add the cauliflower florets and bring to a boil.

  5. Turn heat down to a simmer, cover the pan and cook for 20 minutes.

  6. Serve with feta cheese or parmesan cheese.
