Quick Tzatziki

Ingredients

  • 16 ounces Plain Greek Yogurt, preferred brand Fage 5%

  • 1 ½ European Cucumber, peeled and grated  

  • 2 small Garlic Cloves, minced

  • 1 ½ Tbsp Prosecco Wine Vinegar

  • 1 Tbsp Extra Virgin Olive Oil

  • 1 Tbsp Fresh Dill, chopped (optional)

  • Pinch of Sea Salt or to taste

  • Pinch of White Pepper

Directions

  1. Grate the cucumber and place it in cheesecloth or a clean cotton towel. Wring it out, getting all the excess liquid out of it.  Then add to a medium sized bowl. 

  2.  Add the yogurt, garlic, wine vinegar, olive oil, dill, salt and pepper to the grated cucumber in the bowl and mix well.

  3. Refrigerate for an hour to let the ingredients meld together.  

  4. Serve with Pita chips, cucumber rounds and carrot sticks.

The Tzatziki will last for up to 5 days in the refrigerator.
