Chicken Quesadillas

Chicken Quesadillas
Makes 4 Quesadillas
Ingredients
Rotisserie Chicken, de-boned and cut into 1 inch pieces
2 ½ Tbsp Taco Seasoning
1 Large Sweet Onion, cut into strips
1 Red Pepper or your color of choice, cut into strips
1 Tsp Coarse Kosher Salt
½ Tsp Black Pepper
½ c Water
Package of 8 inch Flour Tortillas
2 ⅔ c Mexican Cheese Blend, divided
¼ c Cilantro, chopped as garnish
1-2 Jalapenos, sliced in thin coins as garnish
Directions
In a medium sized skillet or cast iron pan over medium-high heat add 2 tbsp olive oil and add in the onions and peppers, saute until they become translucent and brown about 7-8 minutes. Add in the chicken, taco seasoning, salt and pepper and mix, then add ½ c water and mix until the chicken is warmed through. Set aside.
In a separate skillet or cast iron pan, add 1 tbsp butter over medium heat and one of the tortillas in the skillet. Start with ⅓ c cheese and spread around to the edges, then ½ c chicken/onion/pepper mixture, then top with another ⅓ c cheese and place another tortilla on top.
When the quesadilla is golden on the bottom side, flip it over carefully and cook until that side is golden. Repeat the same process with the rest of the tortillas.
Cut the tortillas into wedges and garnish with the jalapenos and cilantro.
Serve with your favorite salsa and sour creamif desired.
