Roasted Carrots

Serves 4

Ingredients

  • 2 lb Carrots, peeled, cut in half lengthwise depending on size and cut to 3-4 inch pieces

  • 2 tbsp Extra Virgin Olive Oil 

  • 1 tsp Oregano 

  • 1 tsp Lawry's Seasoned Salt

  • ½ tsp Black Pepper  

  • 2 Garlic Cloves, minced

  • 2 tbsp Fresh Parsley, chopped

  • 2 tbsp Parmesan Cheese  

Directions

Preheat the oven 425°F.

  1. Place carrots in a large bowl.  Add olive oil, garlic, oregano, parsley, seasoned salt and pepper. Mix well so that all the carrots are well coated.

  2. Place the carrots on a foiled lined rimmed baking sheet pan sprayed with nonstick cooking spray.  

  3. Bake for 15 minutes covered with foil, remove and cook for another 15 minutes.  

  4. Sprinkle the carrots with the parmesan cheese and cook for another 5 minutes.  

  5. Broil for 3-4 minutes until golden. Always keep an eye on your food when broiling. 

  6. Garnish with one tablespoon of parsley.
