SUNNY SIDE UP EGGS

Sunny Side Up Eggs

Ingredients

  • 2 Large Eggs, each cracked in their own ramekin*

  • 1-1 ½ Tbsp Olive Oil, depending on the size of your skillet**

  • Sea Salt and Black Pepper to taste

Directions

  1. In a nonstick skillet, heat up the olive oil for 2-3 minutes over medium low heat, adding enough to coat the bottom of the pan.

  2. Add the cracked eggs to the skillet and cover the pan (do not remove the cover). It should take about 2 - 2 ½ minutes for the egg whites to set and the yolks still runny. 

  3. Remove the cover and carefully transfer with a spatula or slide out of the pan to a plate.

  4. Serve with toast, salt and pepper to taste.

*I crack my eggs into a ramekin first to make sure the yolk doesn’t break.  It saves a mess in the pan. 

**I love to cook my eggs in bacon fat, so save your leftover bacon fat and keep it in a container in the refrigerator.
