It is a great do ahead dish where you can prep the 1st part ahead of time.  Then just pop in the oven to finish it up and it's done less than 10 minutes 

Roasted Potato Coins

Serves 2-3

Ingredients

  • 2 Russet potatoes

  • 2 Tablespoons Extra Virgin Olive oil

  • 1 Tsp Salt 

  • ½ Tsp Black Pepper

  • 2 Tbsp Butter, melted

  • 2 Garlic Cloves, minced

  • 1 Tbsp Fresh Parsley, chopped

  • 1 Tsp Grated Cheese of your choice/each potato 

  • 1 Tbsp Fresh Chives, chopped as garnish

  • Dollop of Sour Cream as garnish, optional

Directions

Preheat the oven to 400°F. 

  1. Rinse and scrub the potatoes well.  Slice the potato into coins about ½ inch thick.

  2. Line a rimmed sheet pan with nonstick cooking spray (line with aluminum foil to reduce clean up). 

  3. Place the potatoes on the pan and brush with the olive oil, salt and pepper on both sides. Roast for about 25-30 minutes or until potatoes are soft.  Set aside to cool.

  4. Mix melted butter,  garlic and the fresh herb in a bowl. Brush the potatoes with the butter herb mixture, top each potato with 1 tsp grated cheese.  

At this point you could set the potatoes aside and add to the oven later.  This is a great do ahead tip.

  1. Add to the oven and cook for about 5 more minutes. Broil for 2-3 minutes or until golden.  Always keep an eye on your food when broiling.

  2. Garnish with chives and/or sour cream.
