Parmesan Roasted Baby Potatoes

Serves 6

Ingredients

  • 3 lb bag of Baby Potatoes

  • ¼ c Parmesan Cheese

  • 4 Garlic Cloves, minced

  • 1 Tbsp Oregano

  • ⅓ c Olive Oil 

  • ½ Tsp Coarse Kosher Salt 

  • ½ Tsp Black Pepper

  • 2 Tbsp Fresh Parsley, chopped 

Directions

Preheat the oven to 400°F. 

  1. Wash and rinse potatoes and cut in halves.  

  2. Add the potatoes to a large bowl.

  3. Add the garlic, oregano, salt, pepper, olive oil and parmesan cheese to the bowl and mix until all the potatoes are coated. 

  4. Spread the potatoes on a sheet pan sprayed with cooking spray (for less clean up line the pan with aluminum foil).

  5. Cook for 20 minutes - halfway through use a spatula to move the potatoes around.  

  6. Broil for 4-5 minutes. Always keep an eye on your food when broiling. 

  7. Garnish with parsley.

Do ahead tip

Make this several hours ahead of your company arriving and leave the sheet pan with the potatoes covered with plastic wrap until ready to cook.
