CHICKEN AND ASPARAGUS ROLL-UPS

Chicken and Asparagus Roll-ups

Serves 4

Ingredients

  • 4 - 4 oz Chicken Boneless, Skinless Breasts 

  • 16 Asparagus Spears (4 spears per roll-up)

  • 5.2 ounce Boursin Garlic and Herb Cheese Spread

  • ¼ Tsp Salt

  • ¼ Tsp Black Pepper

  • ¼ Tsp Oregano

  • ¼ c Mayonnaise

  • 1 Tbsp Dijon

  • 1 Tsp Hot Sauce

  • 1 Egg

  • ½ c Parmesan Cheese

  • 2 Tbsp Fresh Parsley, Chopped

Directions

  1. Preheat the oven to 400°F.

  2. On a large cutting board, pound out chicken breasts a few times so they are 

thin and all the same thickness.  Dry the chicken with a paper towel. 

  1. Mix the salt, pepper and oregano in a ramekin and mix.

  2. Sprinkle on both sides of the chicken, set aside.

  3. In a shallow bowl, add the mayonnaise, egg, hot sauce and dijon and mix until incorporated.

  4. In another shallow bowl, add the parmesan cheese and parsley.

  5. Cut the boursin into six pieces (you will only use 4) and place one in the middle of each chicken breast and spread over all of each breast.

  6. Place 4 asparagus spears on top of the garlic spread and roll up the chicken breast and secure with a toothpick.

  7. Add the chicken to the mayo mixture and coat all sides then roll into the parmesan mixture.

  8. Add the chicken to a rimmed sheet pan lined with aluminum foil and sprayed with cooking spray.

Do Ahead Tip: At this point you could cover with plastic wrap and leave in the refrigerator until ready to cook.  Make sure you let the chicken sit on the counter for 15 minutes before placing it into the oven.

  1. Bake for 20-22 minutes until golden.  Make sure you remove the toothpicks before serving.
