ASPARAGUS BUNDLES

Asparagus Bacon Bundles 

Serves 4-6

Ingredients

  • 36 spears Fresh Asparagus (6 spears per bundle)

  • 6 Slices of Center Cut Bacon (not thick)

  • 1 Tbsp Extra Virgin Olive oil

  • ¼ Tsp Coarse Kosher Salt

  • ⅛ Tsp Black Pepper

Directions

Preheat the oven to 400°F

  1. Add the bacon slices to a rimmed sheet pan lined with aluminum foil and par cook for 6 minutes.  Remove from the oven and place bacon on a plate lined with paper towels. Set aside.

  2. Turn the oven up to the oven to 425°F

  3. Rinse the asparagus and pat dry.  Snap the stem where the woody part stops (where the white turns to green).

  4. Drizzle olive oil over the asparagus and salt and pepper, mix so all the spears are coated.

  5. Divide the asparagus into 6 bundles (6 spears each) and carefully wrap the slice of bacon around the spears and tie in a loose knot. You can trim the ends of the bacon once wrapped if needed. 

  6. Add the bacon wrapped asparagus bundles to a rimmed sheet pan lined with aluminum foil sprayed with nonstick cooking spray.

  7. Bake for 20 minutes until bacon is crispy.
