What I love about these skewers is that you can substitute with whatever your favorite antipasto ingredients are and it is a very easy appetizer to pull together!

Mini Antipasto Skewers

Makes 10

Ingredients

  • 10 Cherry Tomatoes

  • 10 Mini Mozzarella Balls

  • 10 Marinated Mushrooms

  • 8 ounce container Red Pepperazzi Whole Mini Peppers marinated (Preferred brand Delallo)

  • 20 Basil Leaves

  • 10 Pieces of Sopressata

  • 10 - 5 inch skewers

  • Bottle of Balsamic Glaze

Directions

  1. Fold each of the Sopressata in half then in half again, set aside.

  2. Thread the skewer with a marinated pepper first, then the mushroom, basil leaf (fold in half or thirds depending on the size), Sopresssata, mozzarella ball, basil leaf, and last the cherry tomato.

  3. Lay on a pretty platter and drizzle with balsamic glaze.
