COOKIES & CREAM ICE CREAM PIE

This is a great do ahead dessert. It will last in the freezer for weeks.

Cookies & Cream Ice Cream Pie

Ingredients for Cookie Crust

  • 1 ½ c ground Oreo Cookies with the middle cream removed (about 16 whole)

  • ¼ c Sugar

  • 3 Tbsp unsalted Butter, melted

Ingredients for Cookies & Cream Ice Cream

  • 1 ½ c Whole Milk

  • 1 ⅛ c Sugar

  • 3 c Heavy Cream

  • 1 Tbsp Vanilla Extract

  • 1 ½ c Oreo Cookies, crushed

  • Equipment: Ice Cream Maker

      Or

  • 1 Quart of Cookies & Cream Ice Cream, softened

Ingredients for Whipped Cream Topping

  • 1 c Heavy Cream

  • 2 Tbsp Confectioners Sugar

  • 1 Tsp Vanilla Extract

             Or 

  • Can of Whipped Cream

Directions

Preheat the oven to 375F

  1. In a food processor, add chocolate wafers to a food processor and grind until fine.  

  2. In a medium size bowl mix in the wafers and sugar, then add the melted butter until blended well.

  3. In a 9 inch pie dish, press the mixture evenly with your fingers on the bottom of the pie dish and up the sides.  Bake for 8-9 minutes. Set aside to cool completely.

  4. If you are making your own ice cream, add the whole milk, sugar, heavy cream and vanilla to a stand mixer, then transfer to the ice cream maker. The last 5 minutes add the crushed cookies.  If you are using store bought ice cream, let the ice cream sit on the counter for 15 minutes (it will be easier to spread softened. 

  5. Add the ice cream to the cooled crust. Spread the ice cream with an offset spatula to smooth the top.

  6. Place in the freezer for a few hours.

  7. In a stand mixer add the heavy cream, confectioners sugar and vanilla and whip until stiff peaks form. 

  8. Take the pie out of the freezer and decorate with oreo cookie crumbs and whipped cream. Place back into the freezer for a few more hours, overnight is even better.

  9. When ready to serve, use a sharp knife to cut the slices and wipe the knife clean inbetween each slice for neater slices.
