This is a great salad to bring to a cookout - there is no mayonnaise to worry about! This is also a great summer meal topping it with some grilled chicken or shrimp!

Caprese Pasta Salad

Ingredients

  • 1 lb Farfalle Pasta or your preferred 

  • 2 c Cherry Tomatoes, halved

  • 8 ounces of Fresh Mozzarella Pearls

  • ½ c Extra Virgin Olive Oil

  • ¼ c Balsamic Vinegar

  • 1 Tsp Dijon Mustard

  • 2 Garlic Cloves, minced

  • 2 Tsp Salt

  • 1 Tsp Black Pepper

  • ¼ c Fresh Basil, Chiffonade

Directions

  1. Bring a large pot of salted water to boil and cook the pasta until al dente, according to package instructions. Drain the pasta and set it aside.

  2. While the pasta is cooking, add the olive oil, balsamic vinegar, dijon, garlic, salt and pepper to a mason jar, cover and shake, set aside.

  3. In a large serving bowl add the cooked pasta, cherry tomatoes, mozzarella pearls. Give the mason jar a good shake and pour over the pasta and toss. 

  4. Sprinkle the basil over the top and give the salad a light toss.
