CHOCOLATE CHIP BANANA MUFFINS

Chocolate Chip Banana Muffins

Ingredients

  • 1 ½ c Flour (preferred brand King Arthur)

  • ⅓ c Crisco

  • ⅔ c Sugar

  • 2 tsp Baking Powder

  • ¼ tsp Baking Soda

  • 2 Eggs

  • ½ Tsp Vanilla Extract

  • 2 Bananas, very ripe

  • 1 c Chocolate Chip Morsels

  • ½ tsp Raw Sugar for topping on each muffin 

Directions

  1.  Preheat the oven 350°F.

  2. Mix flour, baking powder and baking soda in a large bowl.  

  3. In a stand mixer, cream the crisco and sugar until fluffy. 

  4. Add eggs one at a time.  

  5. Add the bananas and vanilla extract and mix well.  

  6. Add the flour mixture.  

  7. Stir in the chocolate chips.

  8. Line a 12-cup muffin tin with paper baking cups.

  9. Scoop the batter about ¼ c into the prepared muffin tin.

  10.  Sprinkle the raw sugar on each muffin.

  11.  Bake on the middle rack for 15-17 minutes or until a toothpick inserted in the center of the muffin comes out clean or with just a few crumbs sticking.  

  12.  Let the muffins cool down in the pan for at least 10 minutes then remove the muffins and place on a wire rack to cool down completely.
