Shrimp & Broccoli Alfredo 

Serves 4

Broccoli Ingredients

  • 1 head of Broccoli (about 1 ½ pounds)

  • 4 tbsp Extra Virgin Olive Oil

  • 1 tsp Coarse Kosher Salt

  • ½ Tsp Black Pepper

  • 3 Garlic Cloves, minced

  • Zest of ½ Lemon

  • ¼ c Parmesan Cheese

Roasted Broccoli Directions

Preheat the oven to 425°F.

  1. Cut the broccoli florets into bite-size pieces.  Add the broccoli to a bowl and add the olive oil, lemon zest, garlic, salt, pepper and mix well so all the florets are coated.  

  2. Line a rimmed baking sheet with aluminum foil and spray with nonstick cooking spray. Add the broccoli to the sheet pan and bake for about 12-15 minutes or until the florets are tender and the tips browned, tossing halfway through.   

  3. While the broccoli is cooking,  heat up a pot of water for the pasta, once at a boil add 1 ½ Tbsp salt to the water.

  4. Place broccoli florets in a large serving bowl and mix with ¼ cup parmesan cheese. Set aside.

Shrimp Ingredients

  • 1 ½ lbs Shrimp (extra large), fresh or defrosted, peeled and tails removed

  • 2 tbsp Extra Virgin Olive Oil

  • 1 tsp Lawry’s Seasoned Salt

  • ½ tsp Black Pepper

Shrimp Directions

Preheat the oven to 400°F.  

  1. Put the shrimp in a bowl, add the olive oil, season all and pepper.  

  2. Mix well so all of the shrimp is coated.

  3. Line a rimmed sheet pan with aluminum foil and spray with nonstick cooking spray.

  4. Add the shrimp to the sheet pan and bake in the oven for 10 minutes. Add to a large serving bowl.

While the shrimp is cooking make the sauce and cook the pasta

Alfredo Sauce & Pasta Ingredients

  • 1 lb Pasta

  • 6 tbsp Butter

  • 1 c Heavy Cream

  • ½ c Grated Parmesan, plus extra for garnish

  • ⅛ tsp Nutmeg

  • Salt + pepper, to taste

  • 1-2 Tbsp Fresh Basil, chiffonade (slicing into thin shreds)

Directions

  1. Cook the pasta according to the instructions on the box

  2. Add the butter to a saucepan over medium heat and melt.  Add the heavy cream and bring to a simmer, stirring constantly.  

  3. Once at a simmer, turn off heat and add parmesan cheese, nutmeg.  Salt and pepper to taste. 

  4. Add the pasta to the shrimp and broccoli in the large serving bowl and mix.

  5. Add the alfredo sauce and mix.

  6. Garnish with extra parmesan cheese and fresh basil
