Cauliflower Parm
Serves 3-4
Ingredients
Head of Cauliflower sliced into 3-4 ¾ inch thick pieces*
2 Eggs, beaten
1 Tsp Franks Red Hot Sauce
½ c Plain Bread Crumbs
½ c Panko, unseasoned
⅓ c Parmesan Cheese, divided
Mozzarella Cheese
⅔ - 1 c Marinara Sauce
2 Tbsp Fresh Parsley, chopped for garnish
Directions
Preheat the Oven to 400F
Line a rimmed sheet pan with parchment paper.
In a wide dish, add the breadcrumbs, panko and ¼ c parmesan cheese and mix together.
In another wide dish, mix the beaten egg with the hot sauce.
Brush or dip both sides of the cauliflower in the egg mixture then dip both sides into the breadcrumb mixture and place on the sheet pan.
Bake in the oven for 35-40 minutes.
While the cauliflower is baking, add the marinara sauce to a small saucepan and heat up, set aside.
Remove the cauliflower steaks from the oven and add generous dollops of marinara sauce, topped with a slice of mozzarella. Place the sheet pan back into the oven for about 5 minutes until melted and golden.
Serve immediately and sprinkle the remaining parmesan cheese over the steaks and garnish with the fresh parsley.
*How to cut into steaks- Trim the leaves, trim the base then place on a secure surface. Cut the cauliflower right down the middle then make ¾ inch slices on each side, you should get 3-4 cauliflower steaks depending on how large the head of cauliflower is.
