You can customize this recipe with any of your favorite ingredients!

Greek Power Bowl

Serves 4

Ingredients

  • 2 c Greek Lemon Chicken*

  • 1 ½ c Cherry Tomatoes sliced in half  

  • 1 c Cucumbers, sliced or diced

  • ½ c Red Onion, diced  

  • 1 c Feta Cheese, crumbled 

  • 4 Tbps Pitted Kalamata Olives  

  • 1 ⅓ c Rice Pilaf**  

  • 2 c Baby Spinach, packed   

  • 1 c + Tzatziki*** 

  • Lemon Shallot Dressing or your favorite Greek Dressing

  • 2 Soft Boiled Eggs***

  • Chopped Scallions for garnish

Directions

  1. Add the spinach to a medium bowl, toss with a few tablespoons of dressing.

  2. To start building the bowls, dividing equally between, add the spinach in one section then cherry tomatoes, cucumbers and red onions.  Drizzle the vegetables with a little of the dressing.  

  3. Place the rice in one section and top with the chicken then add the olives,  feta to another section of the bowl.  Add a dollop of tzatziki in the middle of the bowl and place ½ egg on the side of the bowl. 

  4. Sprinkle with scallions and serve with Greek Style Pocketless Pita Bread.

  5. Serve extra tzatziki on the side.

****Soft Boiled Eggs - in a small saucepan filled ⅔ with water, bring to a boil.  Add the eggs gently into the water and cook for 6 minutes for a creamy/jammy center. One done set in water to cool eggs - once cool to touch peel them.
