Pumpkin Whoopie Pie Martini

Makes 3-4 (depending on how big your martini glasses are)

Ingredients

  • ½ c Kissed Caramel Vodka (Smirnoff brand is the best)

  • ¼ c RumChata Pumpkin Spice

  • ¼ c White Chocolate Liqueur

  • ¼ c Baileys Irish Cream

  • 1 Tbsp Pumpkin Puree

  • ⅛ Tsp Pumpkin Pie Spice

  • ⅛ Tsp Ground Cinnamon

  • Pumpkin Ginger Cookies*, ground for garnish

  • Mini Pumpkin Whoopie Pies for Garnish

Directions

  1. In a small pitcher add the vodka, rumchata, white chocolate liqueur and baileys and give it a stir.  Then add the pumpkin puree, pumpkin spice and cinnamon and stir until combined.  I used a small whisk and it worked really well.  

  2. At this point put the pitcher in the refrigerator for a few hours to chill.

  3. Set up a small dish with a little rumchata and another dish with the ground pumpkin ginger cookies; set aside.

  4. When ready to serve, dip the edges of the martini rim into the rumchata then into the ground cookies.

  5. Give the pitcher a good stir then fill a shaker with ice and add some of the mixture, shaking for 10-20 seconds. Strain into the martini glass.

  6. Garnish with a mini pumpkin whoopie pie.

*The pumpkin ginger cookies are seasonal so if you cannot find them I suggest using regular ginger cookies.
