Pumpkin Whoopie Pie Martini
Makes 3-4 (depending on how big your martini glasses are)
Ingredients
½ c Kissed Caramel Vodka (Smirnoff brand is the best)
¼ c RumChata Pumpkin Spice
¼ c White Chocolate Liqueur
¼ c Baileys Irish Cream
1 Tbsp Pumpkin Puree
⅛ Tsp Pumpkin Pie Spice
⅛ Tsp Ground Cinnamon
Pumpkin Ginger Cookies*, ground for garnish
Mini Pumpkin Whoopie Pies for Garnish
Directions
In a small pitcher add the vodka, rumchata, white chocolate liqueur and baileys and give it a stir. Then add the pumpkin puree, pumpkin spice and cinnamon and stir until combined. I used a small whisk and it worked really well.
At this point put the pitcher in the refrigerator for a few hours to chill.
Set up a small dish with a little rumchata and another dish with the ground pumpkin ginger cookies; set aside.
When ready to serve, dip the edges of the martini rim into the rumchata then into the ground cookies.
Give the pitcher a good stir then fill a shaker with ice and add some of the mixture, shaking for 10-20 seconds. Strain into the martini glass.
Garnish with a mini pumpkin whoopie pie.
*The pumpkin ginger cookies are seasonal so if you cannot find them I suggest using regular ginger cookies.
