Whoopie Pies

Makes 18 Moons (36 halves)

This is my mom’s recipe and has always been a favorite of ours growing up.  She would also color the frosting for different holidays making them very festive.

Ingredients

  • ½ c Crisco

  • 1 c Sugar

  • 1 Egg

  • 1 tbsp Vanilla

  • 1 c Whole Milk

  • 2 c Flour

  • 1 ½ tsp Baking Soda

  • ½ tsp Salt

  • ½ c Dutch-Process Cocoa Powder

  • ½ tsp Baking Powder

Directions

Preheat the oven to 425°F.    

  1. In a stand mixer, cream together crisco, sugar then add the egg, vanilla and milk.  

  2. Sift flour, baking soda, baking powder, salt and cocoa powder.  

  3. Add the dry ingredients and mix well.

  4. Drop by spoonful on an ungreased cookie sheet. 

  5. Bake for  7-10 mins.

Filling

Ingredients

  • ½ c Butter, softened to room temperature

  • ½ c Crisco

  • ½ c Marshmallow

  • 1 c Confectioners Sugar

Directions

  1. Cream the butter, crisco, marshmallow in a stand mixer, then add the  confectioners sugar ½ c at a time.

  2. Mix for about 3 minutes, until creamy.

  3. Spread a heaping tablespoon of the filling on to the flat sides of the half cakes and top with remaining cake.

These can be made a day ahead of your event, just place them in an airtight container and use wax paper in between layers and keep at room temperature.  They also freeze well.

Note: Use food coloring to make the frosting festive during holidays.
