I love using martini glasses to fancy this recipe up by serving the mashed potatoes in them. This could be made as a side to a delicious meal (or a meal in itself!).  It would also be a fun appetizer to serve.  

You can change up the topping choices to whatever your favorites are!

Mashed Potato Bar 

Serves 6-8

Ingredients

  • Garlic Mashed Potatoes (recipe below)

or if you want to take a short cut buy garlic mashed at the grocery store - there are some very delicious premade brands

  • 1 c Cheddar Cheese, shredded

  • ½ c Scallions, diced

  • 1 c Sour Cream

  • 1-2 c Broccoli (microwaved or steamed)

  • 1 pound of Bacon, cooked and crumbled

Directions

  1. Cook the mashed potatoes as noted below.

  2. Add the cheddar cheese, scallions, sour cream, broccoli and bacon to individual dishes.

  3. Add the mashed potatoes to martini glasses filling about ⅔ full.  

  4. Let your guests add their favorite toppings. 

Garlic Mashed Potatoes

Serves 6-8

Ingredients

  • 5 pounds Yellow Potatoes (Yukon Gold)

  • 4 smashed Garlic Cloves

  • 1 Tsp Coarse Kosher Salt

  • 1 stick Salted Butter, melted

  • 5 ounce package garlic cheese spread like Boursin

  • ¼ cup Sour Cream

  • ¼ cup Cream Cheese, softened

  • ¼ cup Heavy Cream

  • Chopped Chives and/or Fresh Parlsey, chopped for garnish

Directions

  1. Peel the potatoes and cut into 2 inch pieces.  

  2. Fill the pot with water, potatoes, garlic cloves and kosher salt.  

  3. Bring to a boil until potatoes are soft.  

  4. Drain the potatoes and garlic in a strainer.

  5. Add the potatoes and garlic back into the pot they were cooked in.

  6. Add the butter, garlic cheese spread, sour cream and cream cheese.  

  7. Mash the potatoes.

  8. Add the heavy cream and mix.

  9. Season with salt & pepper to taste.

  10. Add to Martini Glasses and let your guests add their favorite fixings.
