BLUEBERRY, BRIE AND FIG CROSTINI
Blueberry, Brie & Fig Crostini
Makes 16
Crostini Ingredients
1 loaf Ciabatta or Skinny French Bread, sliced ½ inch thick
½ c Extra Virgin Olive Oil
3 Whole Garlic Cloves, peeled
Zest of one lemon
Crostini Directions
Preheat the oven 350°F.
Arrange 16 ciabatta slices on a sheet pan and brush both sides with the olive oil.
Cook bread for about 20 minutes or until golden.
When the bread comes out of the oven immediately rub the garlic cloves all over each of the bread slices.
Add the zest of the lemon all over the slices.
Leave on the sheet pan to cool completely.
Blueberry, Brie & Fig Ingredients
Small jar of Fig preserves (4-6 oz)
Wedge of Brie, softened to room temperature (at least an hour)
Pint of Blueberries
¼ c Fresh Basil, chiffonade (this is when you roll up the Basil like its a burrito and cut thin strips)
Assembly of Crostini’s
Add the crostini’s to a decorative platter.
Depending on how large or small your crostini are you may need to add more or less of each ingredient.
Spread about ½ - 1 tbsp softened brie over top of the crostini, top with about 1 - 1 ½ tsp of fig preserves.
Depending on how big the blueberries arrange 4-5 on top of the fig.
Garnish with the basil and serve.
