ASPARAGUS WRAPPED in PROSCUITTO with a savory dipping sauce

Asparagus Wrapped in Proscuitto with a Savory Dipping Sauce

Ingredients

  • 20 Asparagus Spears, preferable on the thicker side, remove bottom third of spear

  • ¼ pound of good sliced Prosciutto (preferred Imported Prosciutto di Parma)

Directions

  1. Bring a large pot with water to a boil.

  2. Add the asparagus and blanch for 2 minutes.

  3. Add the asparagus to a bowl filled with cold water and ice cubes.  This is to stop the asparagus from cooking any further and they will have a beautiful bright green color.  Once cool, drain and pat dry, set aside.

  4.  Cut the prosciutto in half.

  5. Wrap the half of the prosciutto around the whole length of the asparagus tugging it firmly so it wraps tightly.

  6. Serve on a platter with the dipping sauce.

Dipping sauce

Ingredients

  • ½ cup Mayonnaise

  • 1 Tbsp Dijon Mustard

  • 2 ½ Tbsp Honey

  • 1 t]Tbsp Soy Sauce

  • ¼ Tsp Black Pepper

Directions

  1. In a small bowl, add the mayonnaise, dijon, honey, soy sauce and pepper. Mix well.  Keep in the refrigerator until ready to use.

Note: Can be made several days ahead of time.
