Glazed Ham 

Serves 8-10

Ingredients

  • 10 Pound Half Ham bone-in, fully cooked  

  • ½ inch water in the roasting pan

  • ½ c Butter, unsalted

  • ¼ c Apple Juice

  • ½ c Honey

  • ¼ c Maple Syrup

  • ½ c Brown Sugar

  • 1 Tsp Worcestershire Sauce

  • 1 Tbsp Dijon Mustard

  • Whole Cloves

  • ¼ Tsp Cinnamon

  • ¼ Tsp Ground Allspice

  • 4 Garlic Cloves, smashed

Directions

Preheat the oven 325F

  1. Take the ham out of the refrigerator and let it sit on the counter to get room temperature for at least an hour up to two hours.

  2. Remove/peel the rind off the ham but not the fat.  Use a sharp knife to score a 1-inch-wide diamond pattern over the entire ham (don’t cut deeper than through the fat, maybe ¼  inch deep) . Place the ham in the baking tray; pour enough water up to ½ inch into the base of the pan and place the whole cloves in each of the diamond patterns.  Cover the ham with two pieces of foil and bake for 45-60 minutes.

  3. While the ham is cooking, melt the butter in a sauce-pan over medium low heat.  Once melted, add the honey, brown sugar, maple syrup, worcestershire sauce, dijon, ground cloves, cinnamon, allspice, garlic and apple juice and bring to a low simmer.  Once you see it start to thicken, remove from heat right away, set aside.

  4. After 30 minutes is up, remove the foil and brush the glaze over the ham and place back in the oven.  Baste the ham every 20 minutes. If the glaze gets too thick, add some of the pan juices to thin it out a bit.

  5. Depending on the size of your ham, cook for about 18-20 minutes per pound or until the internal temperature is 110-120° with a meat thermometer.

  6. Let the ham rest for 15 minutes before carving.

You can also cook the ham up to 2 hours in advance, tent with foil and serve at room temperature.
