Caprese Crostinis

Makes 16 

Crostini Ingredients

  • 1 loaf Ciabatta or Sourdough bread sliced ½ inch thick

  • ½ c Extra Virgin Olive Oil

  • 3 whole cloves of garlic peeled

  • Zest of one lemon

Crostini Directions

Preheat the oven 350°F.

  1. Arrange 16 ciabatta slices on a sheet pan and spread both sides with the olive oil. 

  2. Cook bread for about 20 minutes or until golden.

  3. When the bread comes out of the oven immediately rub the garlic cloves all over each of the bread slices.  

  4. Add the zest of the lemon all over the slices.  

  5. Leave on the sheet pan to cool completely.

Tomato Mozzarella Ingredients

  • 4 Roma Tomatoes, sliced thin and horizontally

  • 1 pound fresh mozzarella Cheese, pre-sliced, trim if needed to fit on the bread

  • ⅓ c Fresh Basil Chiffonade (this is when you roll up the Basil like its a burrito and cut thin strips)

  • Extra Virgin Olive Oil for drizzling

  • Balsamic Glaze for drizzling

  • Coarse Kosher Salt and Pepper 

Assembly of Caprese Crostini’s 

  1. Add the crostini’s to a decorative platter.

  2. Top each with a slice of tomato and then a slice of mozzarella

  3. Drizzle the olive oil and balsamic glaze over the crostinis.

  4. Season with salt and pepper

  5. Garnish with the basil and serve immediately.
