CAPRESE SKEWERS
Caprese Skewers
Makes 12
Ingredients
24 Cherry Tomatoes cut in half
8 ounce package of Pearl Mozzarella Balls
12 small basil leaves (if the basil leaves are large cut them in half)
12 mini skewers (4 inches)
⅛ c Extra Virgin Olive Oil
2 Tbsp Balsamic Glaze
Coarse Sea Salt and Black Pepper to taste
Directions
Wash tomatoes and basil leaves and gently pat dry.
Pat dry the mozzarella balls.
Take a small basil leaf and spear it on the skewer, thread a mozzarella ball then half of the cherry tomato (cut side down) followed by another mozzarella ball followed by the other half of the cherry tomato (cut side down).
The skewers should stand on the platter.
Just before serving, drizzle with the olive oil and balsamic glaze.
Season with salt and pepper.
