CHICKEN SPINACH ROLL-UPS
Chicken Spinach Roll-ups
Serves 4
Ingredients
4 - 4 oz Chicken Boneless, Skinless Breasts
3 oz Baby Spinach, stems trimmed
½ Onion, diced
3 tbsp Butter
2 Garlic Cloves, minced
1 tbsp Cottage Cheese
½ c Feta Cheese, crumbled
1 Egg
1 tbsp Fresh Parsley, chopped
½ tsp Seasoned Salt
¼ tsp Black Pepper
Directions
Preheat the oven to 400°F.
On a large cutting board, slice each chicken breast horizontally, almost all the way through. This technique is called “Butterflying”.
Open up the breasts and pound out chicken breasts a few times so they are thin and all the same thickness. Dry the chicken with a paper towel.
In a small skillet, over medium heat, add 1 tablespoon butter and diced onion, saute until soft for about 4-5 minutes.
Add 1 minced clove of garlic and stir for 30 seconds, remove from pan and set aside.
In a bowl, add spinach, cottage cheese, egg, feta and sauteed onions and mix well.
Spray a rimmed sheet pan covered with aluminum foil with nonstick cooking spray.
Lay the chicken flat on a plate, add 2 heaping tablespoons of the spinach mixture, roll up the side of the chicken and secure with a couple toothpicks.
Place the chicken seam-side up on the sheet pan.
Melt 2 tablespoons of butter, add 1 minced clove of garlic and parsley.
Pour over chicken.
Sprinkle the seasoned salt and black pepper over the chicken.
Bake for 22 minutes, broil for 3-4 minutes until golden.
