Maple Glazed Carrots

Serves 4

Ingredients

  • 2 lbs Carrots, trimmed, peeled, cut into 3 inch diagonal pieces

  • 2 Tbsp Extra Virgin Olive Oil

  • 2 Garlic Cloves, minced

  • ½ Tsp Dried Oregano

  • ½ Tsp Salt

  • ¼ Tsp Black Pepper

  • 2 Tbsp Melted Butter

  • 2 Tbsp Maple Syrup

  • 2 Tbsp Brown Sugar

  • Pinch of Red Pepper Flakes

  • 2 Tbsp Fresh Parsley, chopped for the garnish

Directions

Preheat the oven to 425°F

  1. Add the olive oil, garlic, oregano, red pepper flakes, salt and pepper to a small bowl and mix.

  2. Add the carrots to a medium sized bowl and add the olive oil mixture. Make sure carrots are coated well.

  3. Add the carrots to a rimmed sheet pan lined with aluminum foil sprayed with cooking spray.

  4. Roast for 30 minutes, tossing every 15 minutes.

  5. Melt the butter and mix in the maple syrup and brown sugar and pour over the carrots, mixing in well.

  6. Roast for another 20 minutes.

  7. Garnish with fresh parsley.
