PARMESAN BAKED CHICKEN

Parmesan Chicken

Serves 4

Ingredients

  • 4 - four ounce chicken boneless, skinless breasts (preferred brand Springer individually wrapped)

  • 1 egg

  • ¼ cup mayonnaise

  • 1 heaping tablespoon Dijon

  • 2 teaspoons Franks red hot sauce or whatever kind you prefer

  • ½ cup grated parmesan cheese

  • ¼ cup chopped parsley

  • ¼ teaspoon Season All

  • ¼ teaspoon ground pepper

Directions

Preheat the oven to 400°F.

  1. On a large cutting board pound out chicken breasts so they are all the same thickness.  Dry the chicken with a paper towel and then season with season all and pepper on one side only.  

  2. Mix eggs, mayonnaise, dijon and hot sauce together in a dish.  

  3. Mix parmesan cheese and parsley in another dish.

  4. Dip the chicken into the egg mixture, then the parmesan mixture.  

  5. Add the chicken to a rimmed sheet pan sprayed with cooking spray (for less clean up line the pan with aluminum foil). 

  6. Bake for 22 minutes, then broil for 3-4 minutes or until golden.  Always keep an eye on your food when broiling.

This recipe can be made ahead of time and just cover the sheet pan with foil and leave in the refrigerator until you are ready to cook.  Before you place it in the oven let it sit on the counter for 15 minutes.
