GREEK LEMON CHICKEN

Greek Lemon Chicken

Ingredients

  • Deboned cooked rotisserie chicken, sliced into 2-3 inch pieces.

  • 2 Garlic Cloves minced

  • Juice and Zest of one Lemon, plus half a lemon

  • 1 Tsp Oregano

  • 1 Tsp Hot Sauce

  • ¼ c Olive Oil

  • 1 Tsp Coarse Kosher Salt

  • 1 Tsp Black Pepper

  • 1 Tbsp fresh Parsley, chopped

Directions

  1. Add the chicken to a bowl.

  2. Add the garlic, juice and zest of a lemon, oregano, hot sauce, salt, pepper and olive oil and mix well.

  3. Place the chicken on a rimmed sheet pan lined with aluminum foil and sprayed with cooking spray.   

  4. Broil on the middle rack for 10 minutes 

  5. Garnish with parsley and squeeze the juice of the half lemon all over the top.

    This would be delicious with the avogolemono soup or on top of your favorite salad.
