I was never a big fan of mojito’s until I had one at Tommy Bahamas in Naples, FL.  The bartender shared with me how they make it and I have been making it this way ever since.  The sugar cane stick is a great garnish for this drink. This is a refreshing summer time cocktail!

Mojito

Serves 2

Ingredients

  • ⅔ cup of white rum

  • 1 - 12 ounce can of sprite or 7up

  • 4 lime wedges, extra for garnish

  • 8-10 mint leaves

  • 2 sugar cane sticks, optional

  • 2-3 tablespoons dark rum

  • Tools - Muddler

Directions

  1. In two 12 ounce glasses, add 2 lime wedges and 4-5 mint leaves in each glass and muddle (gently mash the mint and limes to release their juices)

  2. Add enough ice to fill the glass ¾ full of ice

  3. Add ⅓ c rum to each glass

  4. Add ½ the sprite too each glass or until the glass is ¾ full and stir.

  5. Add the sugar cane stick if you have them.

  6. Float the dark rum on top about 1 ½ tbsp in each glass - do not stir.

  7. Garnish with mint leaves and lime wedge.
