Popovers

Makes 12 

Ingredients

  • 2 ½ c Whole Milk

  • 2 ½ c Flour

  • 1 teaspoon salt

  • 6 eggs

  • 1 ½ Tbsp Butter, melted  

Directions

Preheat the oven to 425°F.

  1. Mix flour and salt in a large bowl.

  2. Mix the milk and eggs in another bowl. Keep mixing until there is no yellow egg showing. Then add milk & egg mixture to the flour mixture and mix.

  3. Then add melted butter. Mix.  

  4. Spray the popover pan with cooking spray and add to a rimmed baking sheet lined with tin foil 

  5. Fill popover pans about ¾ full and bake for 20 minutes.

  6. Then reduce the oven to 325F and bake for another 15-20 minutes or until golden brown.

  7.  Serve right away.

A nice variation is to add one to two tablespoon chopped chives and/or herbs to the tops before you bake.
