EGG & SAUSAGE BAKE
Make this a day ahead and cover with plastic wrap and leave in the refrigerator overnight, then bake the next morning. This would be a great do ahead for breakfast on Easter morning.
Egg & Sausage Bake
Ingredients
1 pound Breakfast Sausage, preferred brand Jimmy Dean
10 Eggs
1 c Sour Cream
½ c Whole Milk
1 Tsp Hot Sauce, preferred brand Franks
½ c Sweet Onion, chopped
½ c Red Pepper, diced
1 Garlic Clove, minced
2 ½ c Mexican Blend Cheese, Shredded
½ Tsp Salt
½ Tsp Black Pepper
2 Tbsp Fresh Parsley, chopped for garnish
Directions
Preheat the oven to 350F
In a large mixing bowl add the eggs, sour cream, milk, hot sauce, salt and pepper and mix until incorporated. Set aside.
In a medium skillet, saute the sausage, breaking it up into small pieces. Add the sausage to a small bowl using a slotted spoon, set aside. Drain the grease from the pan leaving 1-2 Tbsp.
In the skillet the sausage was cooked in, add the onions and peppers and saute over medium low heat for 4-5 minutes. Add the garlic and saute for 30 seconds and add all to the bowl with the sausage.
Mix the sausage mixture into the eggs and stir to combine.
Mix in the cheese.
In a 9x13 pan, sprayed with cooking spray and add the egg mixture. Bake for 40-45 minutes. The edges should be firm and the center slightly jiggly.
Garnish with fresh parsley.
