Smoked Salmon Cucumber Bites

Ingredients

  • 1 large english Cucumber

  • 2 ounces Smoked Salmon

  • 4 oz Cream Cheese, softened to room temperature

  • ¼  c Sour Cream 

  • ½  Tbsp fresh Lemon Juice 

  • ½ Tsp Lemon Zest

  • 1tbsp fresh dill, chopped plus extra sprigs for garnish 

  • ½  Tsp Horseradish

  • 1 Tbsp Capers, drained

  • 1 Tbsp Scallion, diced

  • Salt + pepper, to taste

Directions

  1. Combine the cream cheese and sour cream until mixed well.  

  2. Add lemon juice, lemon zest, dill, horseradish, capers, onions, salt and pepper. 

  3. Slice the cucumber into ¼ inch rounds.

  4. Top each cucumber slice with about 1 tsp of cream cheese mixture, add a small piece of smoked salmon and top with a sprig of dill.
