SALMON BURGERS WITH SESAME MAYO

Salmon Burgers with Sesame Mayo

Makes 4 burgers

Ingredients

  • 1 lb of Salmon, skinned and finely chopped

  • ½ c Panko or Parmesan cheese*

  • ½ c Scallions, diced

  • 1 Garlic Clove, minced

  • 1 Egg

  • 1 tsp Soy Sauce

  • 1 tsp Lemon Zest

  • 1 tsp Fresh Lemon Juice

  • ¼ tsp Coarse Sea Salt

  • ¼ tsp Black Pepper

  • 2 tbsp Fresh Dill, chopped

  • 4 of your favorite type of buns

  • Tomato, sliced

  • 4 Lettuce Leaves

Directions

  1. Add the salmon to a food processor with a few pulses to finely chop, set aside in a bowl.

  2. In another bowl beat the egg and add soy sauce, lemon zest, lemon juice, garlic, salt and pepper.  

  3. Add the egg mix, panko, scallions and dill to the salmon. Mix well with your hands.

  4. Make four salmon burgers. 

  5. Brush both sides with olive oil.

  6. Cook 4-5 minutes each side - I use a panini press but a nonstick skillet will work too.

  7. Spread the sesame mayo on both sides of the bread, add tomato and lettuce, top with salmon burger.

*Grated parmesan cheese can be subsituted for panko to make this recipe low carb.

Sesame Mayo

Ingredients

  • 1 c Mayonnaise

  • 2 Garlic Cloves, minced

  • 1 tsp Soy Sauce

  • ½ tsp Sesame Oil

  • ½ tsp Coarse Kosher Salt

  • ½ tsp Black Pepper

Directions

  1. Mix all of the ingredients together in a bowl.  Can be made ahead of time and left in the refrigerator.
