Spinach Feta Crustless Quiche

Serves 4-6

Ingredients

  • 6 Eggs 

  • 3-4 oz Baby Spinach

  • ½ Onion, diced

  • 1 tbsp Olive Oil

  • 2 Garlic Cloves, minced

  • ½ c Feta Cheese, crumbled 

  • ½ c Kasseri cheese, shredded

  • ½ c Heavy Cream

  • ½ c Whole Milk

  • 1 tsp Hot Sauce

  • ½ tsp Coarse Kosher Salt

  • ½ tsp Black Pepper

Directions

Preheat the oven to 400°F.

  1. In a small skillet, over medium heat, add 1 tablespoon Olive Oil and diced onion, sauté until soft, about 4-5 minutes.  

  2. Add minced garlic and stir for 30 seconds.

  3. Add the spinach and saute for 2 minutes until it is wilted and remove the pan from the heat and set aside.

  4. In a separate bowl, whisk 6 eggs till frothy, add the heavy cream, whole milk, hot sauce, salt and pepper and beat until mixed well. 

  5. Add the feta, kasseri cheese and spinach mix to the egg mixture and mix well.

  6. Spray pie/quiche dish with nonstick cooking spray.

  7. Pour into the pie/quiche dish.

  8. Bake for 25-30 minutes or until the middle is set.

  9. Let rest for at least 10 minutes before slicing. 

  10. Garnish with fresh parsley, chopped tomatoes and/or crumbled feta and slice into 6 wedges.
