This is a great prep ahead appetizer and also works well as a side to a meal.  You can prep these the day before or morning of and just add them into the oven when your guests arrive.

Baked Asparagus Wraps

Serves 4-6

Ingredients

  • 1 bunch of Asparagus Spears (about 18 and preferably on the thicker side), remove bottom third of spear

  • 5.2 ounce package of Boursin or any Garlic and Herb Spread, room temp

  • 4 ounces of sliced Prosciutto (prefer to use the prepackaged)

Directions

Preheat the oven on broil.

  1. Rinse the asparagus and pat dry. Set aside.

  2.  Cut the prosciutto in half.

  3. Spread ½ tsp each of the garlic herb spread on each half of the prosciutto then add the asparagus spear and wrap the prosciutto around most of the length of the asparagus tugging it firmly so it wraps tightly. Repeat with the remaining spears.

  4. Add the wrapped spears to a aluminum foil lined rimmed small sheet pan sprayed with cooking spray.

  5. Add to the oven on the middle rack and broil for 10 minutes.  Serve immediately.
